Mahi-Mahi with Chipotle Mayonnaise

Serves 6

Chipotle Mayonnaise
½ C Mayonnaise
2 T Finely Chopped Chipotles in Adobo Sauce (canned)
Salt and Freshly Ground Black Pepper

6 Six-Oz Fillets Mahi-Mahi
2 T Olive Oil
Salt and Freshly Ground Black Pepper
1 Bunch of Cilantro (finely chopped)

Chipotle Mayonnaise
Combine the chipotles and mayonnaise and mix thoroughly. Add salt and pepper to taste and set aside.

Set a medium fire on the grill. Set a grilling basket on the grill grate. Oil the rack. Brush the fillets with oil and season with salt and pepper. Set the fish fillets on the hot rack and grill for 4 to 5 minutes, until the fish is lightly browned on the outside and firm and white on the inside. Using tongs or a spatula, carefully turn the fillets and continue to grill for another 3 to 4 minutes.

Transfer to serving plates, brush the mayonnaise on the mahi-mahi and sprinkle chopped cilantro on top, serve right away.

I'm not sure about the Mayo, I actually don't like it. But I like Jalapenos and in this case they are smoked? That sounds good!

Hey :) Mayo didn't look to bad, But of course I like mayo lol.. I've never had a smoked Jalapeno, Definitely sounds good :)
